The vines are grown on soils composed of clay and limestone, mixed with the tawny-coloured sand typical of the Gascogne region. A twelve-hour cold maceration is done to extract the aromatic precursors". Fermentation occurs at 15°C with specific yeasts. Fine lees are reintroduced after the fermentation process to enhance flavours and refine texture."
Pale yellow with green inflections, on the nose there are citrus characteristics as well as hints of gooseberry and box tree. On the palate, it is beautifully fresh and lively with lime, elderflower and herbaceous notes.
Le Confidentiel Sauvignon is perfect as an aperitif, but will also accompany any sort of fish, light meats, tangy cheeses and Asian food.
